The salt, besides coloring the bread (that will have a golden crust and a white soft inside) completes the dough; since it facilitates the production it has thus to be added at the beginning.The salt, normally, has to be around the 2%, but the quantity can vary according to the receipt: low-calory breads and the special breads have an inferior quantity, about the 1.2%.
