Fats and margarine

Mono-glycerides of fatty acids are used as emulsifiers and stabilizers for various preparations, especially for cakes and baked products. They are classified with the label E471. Normally they are synthetical products that act as emulsifiers in the margarine but with the same function they can be used for bread and for baked products to preserve their softness
